Angelique's Christmas Dinner

'Tis the season to over eat and put on extra pounds. Many of us do not hold back at this time of year. It is very important to just treat ourselves and not go overboard.
Why not make a healthier Christmas dinner for you and your family this year?
Here is my dinner that I had for my friends just this past weekend.


-smoked salmon
-crackers and cheese(not my choice)
-black bean, cucumber, tomato and avocado salad(thanks Crystal!)
-bruschetta(from Leona, really healthy and delicious)


-Herb spiced turkey rubbed with olive oil, thyme, rosemary, pepper, and stuffed with lemons, garlic and onions
-Mashed potatoes
-Grilled yams with olive oil and pepper
-BBQ green beans with olive oil, garlic and onions
-Homemade Savory Ezekiel bread stuffing(delicious) Recipe at bottom of page
-Homemade Apple and Cranberry sauce(sweetened with Stevia)

Savoury Ezekiel Bread Stuffing
  • 1 loaf Ezekiel bread, thawed and broken into bite-sized cubes
  • ½ tsp dried thyme
  • 1 tbsp fresh rosemary
  • 1 tsp freshly ground black pepper
  • 1/3 cup butter
  • 1 large onion, chopped
  • 2 cloves garlic, pressed or minced
  • 1/2 cup dried apricots, chopped
  • 10 pearl onions, peeled and quartered  
  • 1/2 cup fresh parsley, chopped
  • 2 cups low-sodium chicken broth

  1. Place bread cubes in a large bowl. Mix in the thyme, rosemary, sage and pepper.
  2. Melt butter spread in a large frying pan on medium heat. Add onions and garlic and sauté for 2 minutes. Cook for about 5 minutes.
  3. Stir the onion mixture into the bowl containing the bread. Add the apricots, baby onions and parsley. Stir in the chicken broth.
  4. Spoon the uncooked stuffing in a casserole dish and cover loosely with tin foil. Bake stuffing in an oven preheated to 325ºF / 160ºC. After 30 minutes, remove the foil and stir thoroughly. Bake for another 30 minutes uncovered.
