I love Kale chips! Kale is a form of cabbage that is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium. This very beneficial leafy green is probably not as popular as it should be due to the bitter taste, but making these into a crunchy snack is a great way to sneak kale into you and your family's diet.
Preheat oven to 350F
Wash and dry kale very well, you don't want them wet at all. Brush them lightly with olive oil, and rip the leaves off the stem. Lay flat on baking sheet and sprinkle with sea salt and pepper. Bake 10-15 minutes or until crispy and a little browned at the edges of the leaves. Careful not to burn them!
1 cup is about 40-60 calories depending on how much oil you put on them.
