Spicy Quinoa Bites

Boil 1/2 cup quinoa according to package directions(I used Casbah organic quinoa).
Meanwhile, sauté 1/2 cup onions and grate 1/4 cup mozzarella cheese.

Preheat oven to 350F

When quinoa is ready, mix in paprika, pepper, thyme, oregano, basil, onions, cheese and 1 egg.

Spray mini muffin tins with non stick spray. Fill tins, I filled 13.

Bake for 15 minutes, let cool a few minutes and serve.
