Protein Packed Yam Muffins

These were so good! You can also use sweet potato for this recipe. Great for a pre or post workout snack!





INGREDIENTS:

1 scoop Vanilla or Unflavored Protein Powder

1/2 cup Egg Whites

Stevia to taste (I use now stevia powder)

1/4 Cup Pure Pumpkin

1/2-1 tsp Cinnamon

1/4 cup Oats

4oz Yams, pre-baked

1 tsp pure Vanilla 


1/2 tsp Baking Powder



Pre-heat oven to 350 degrees. Blend all the ingredients together until batter forms.
Spoon into a pre--lined cupcake pan or silicon muffin pans. Bake @ 350 for 18 - 22 minutes.

Makes about 4 muffins

Approximately Per Muffin: 83 calories .5g fat, 10.65g carbs, 8.3g protein
