I'm so excited about this recipe! Gluten free, soy free and AIP friendly. Hemp protein doesn't have to taste disgusting, especially when you mix it in a delicious muffin :)
Bananas are the natural sweetener and I decided to leave the stevia and honey out, and it was perfect. All natural and lots of flavour.
1/2 cup creamy all natural coconut butter
1/2 cup coconut oil
3 ripe bananas
1/4 cup Manitoba Harvest Chocolate Hemp Protein Smoothie
3 tbsp. chocolate chips (use dairy-free and soy free)
Preheat oven to 350°F. Mix all of the ingredients (except the chocolate chips) and blend until the mixture is smooth.
Spoon the batter into muffin tins filled with paper liners.
Top the muffins with chocolate chips and bake for 30 minutes or until the tops have set and they are starting to brown.
Remove from the oven, let cool and enjoy!
