Protein Chocolate Crepes

Chocolate for breakfast is always wonderful! If you like chocolate, cinnamon and a healthy breakfast, then this is for you :)


2 tbsp cocoa
1/2 scoop chocolate protein powder
1 ounce milk of choice

1 cup egg whites
1/3 cup oats
Lots of cinnamon
Stevia as sweet as you like
Splash of vanilla extract

Mix first 4 ingredients in a bowl and put in fridge.

Preheat crepe pan. Blend next 5 ingredients in a blender or magic bullet. Spray pan with non stick spray. Pour 1/3 of the batter in middle of pan and immediately swirl pan around to coat entire pan. Cook until sides of crepe lift up. Flip and cook 30 seconds to 1 minute more. With fingers, grab one side and fold crepe, then fold again to make a triangle. While 2nd crepe is cooking, spread some chocolate mixture on top of the cooked crepe. Stack 2nd crepe on top and layer with chocolate. Stack the 3rd crepe on top and pour the rest of the chocolate on the crepe and serve. Another option is to layer with peanut butter. I will try that next time...
